Date and Walnut Squares

Being in the dead of summer and having kids around the house for more hours than usual only means you need more snacks to assuage those ‘ Mom, what can I eat? I am bored ‘ calls!

I was looking for date recipes since I was having a large pack of dates lying around in the pantry. I found this recipe in the ‘Good Housekeeping – Step by Step Cookbook’ which is a treasure house of varied and interesting recipes from different parts of the world. So this recipe was perfect – quick and easy with some healthy ingredients! OK so I have this week covered! 🙂 Plus Hubby dear being such a lover of all dried fruits and nuts, I was sure that this recipe would be a hit with everyone.

DSC_0603The recipe called them ‘squares’. Reading the recipe I thought they would resemble bars or cookies. Either way couldn’t wait to try the recipe. It is a really easy recipe and you don’t need to get your electric mixer out either. Just a slight whisk and a large pot will do it. Dump everything into the pan and slide into the oven. Go for a walk and when you come back, help yourself to a square (which actually turned out to be somewhere between a cake and a cookie) with some steaming coffee or tea!. 🙂

Date and Walnut Squares

  • Servings: Makes 16 1 inch squares
  • Time: About 20 minutes prep and 30 minutes baking time
  • Difficulty: Easy

Adapted slightly from Good Housekeeping cookbook

Ingredients:

  • 3/4 cup packed light brown sugar
  • 1/2 cup unsalted butter
  • 1 1/3 cups all purpose flour
  • 1 tsp baking soda
  • 1 cup chopped walnuts
  • 1 cup chopped and pitted dates
  • 2 eggs

Method:

Pre-heat oven to 350 deg F. Grease a 9″ by 9″ brownie pan and line with parchment paper and set aside.

In a medium size cooking pot add the brown sugar and the butter and heat on medium for about 2-3 minutes until the butter is melted and you get a sticky caramel mixture. Remove from heat and keep aside.

Next mix the flour and baking soda in a plate and add to the pot with the butter sugar mixture. Add the chopped dates and walnuts too.

Whisk the eggs in a separate bowl and then add the egg mixture to the flour and date mixture and stir using a thick wooden spoon until all the flour is blended in and you don’t see any dry flour.

Dump the mixture into the pan and bake at 350 deg F for between 25 to 30 minutes or until a knife inserted in the center comes out clean. (Mine set in 25 minutes)

Let cool for a few minutes before cutting into 16 squares.
