Summer Special: Strawberry and Chocolate Cream Cheese Ice cream Pops


icecream6DSC_0645Creamy ..Dreamy …Yummy…just fabulous!  That about describes this ice cream made with cream cheese, fresh strawberries and oreo cookie crumbs! You can’t go wrong with these ingredients can you? You may recall that last summer I had made an ice cream with cream cheese and blueberries which had won the hearts of all my family – both immediate and extended family members included! Not to mention all our friends who were also lucky to get this treat. As a consequence I made the Blueberry cream cheese ice cream several times last summer. 🙂 It was really a huge hit everywhere and was also a ‘feature’ at Fiesta Friday!

This year again the kids had been asking for that when I saw a picture of strawberry and chocolate ice cream popsicles in Better Homes and Garden’s latest issue. I was ‘bowled over’ ! Fell in love with it instantly! Had to totally make it.!  That recipe just used store bought ice cream to make the layers. However, I knew exactly what I wanted to do. I had to give it my famous cream cheese twist! 🙂

My kids helped out with the mixing and between the three of us we probably ate a good cup of the delicious mixture!

We couldn’t wait to finish our dinner that evening so we could have our dessert! And lo and behold, it turned out even better than I thought. The ice cream was so creamy and the slight sourness of the cream cheese mixed with the strawberry made the strawberry layer just so wonderful. And the chocolate of course was delicious especially with the oreo crumb layer on the bottom. Yum Yum good! Believe me folks, you have just got to try this one – you will be happy…and dreamy…and ready to take on the world! 🙂

Only one negative about this ice cream dessert is that it takes a while to thaw because of the texture of cream cheese. So you need to keep it at room temperature for about 10 minutes!

Strawberry and Chocolate Cream Cheese Ice cream Pops

  • Servings: Makes about 16 servings
  • Time: 20 minutes plus 6 hours freezing time
  • Difficulty: Easy

Ingredients:

  • 15 oreo cookies, powdered
  • 3 tbsp unsalted butter, melted
  • about 2 cups fresh strawberries
  • 2 tbsp sugar
  • 2, 8 ounce packs cream cheese softened at room temperature
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1/2 cup chocolate syrup
  • 16 popsicle / craft wood sticks

Method:

  1. Take a square 9 inch brownie pan and layer the bottom with wax paper such that the ends hang out of the edges of the pan.
  2. Powder the oreo cookies in a  food processor and place them in a small bowl. Add the melted butter and mix well. Spread this mixture onto the wax paper in the tray and pat using the back of a glass to press it in a uniform layer.
  3. Take the strawberries and blend / puree them using a hand blender (or a regular blender). Add 2 tbsp of sugar to it and mix. Keep aside.
  4. Take a medium size mixing bowl and add the softened cream cheese and the powdered sugar.  Mix using an electric mixer until smooth and creamy. Then add the heavy cream in small portions and whip until all cream is incorporated and you get a nice and creamy mixture.
  5. Divide the whipped cream cheese mixture into two portions into two separate bowls.
  6. To one bowl, add the chocolate syrup and blend using mixer until well blended. Pour this mixture over the cookie crumbs in the pan.Spread evenly.
  7. To one bowl, add the pureed strawberry mixture and mix well until well blended. Pour this on top of the chocolate layer. Spread to form an even layer.
  8. Now place 16 popsicle sticks evenly spaced so as to form 16 popsicles. Make sure the stick is inserted all the way down.
  9. Freeze for at least 6 hours.
  10. Take the pan out of the freezer and let thaw at room temperature for 10 minutes before transferring onto a board using edges of the wax paper. Cut into 16 squares using a large sharp knife.


STEP WISE PICTURES

1. Place cookie crumbs and butter mixture in base of pan and press.

2. Mix cream cheese, sugar and heavy cream mixture until creamy

3. To half the above mixture, add chocolate syrup and mix well.

4. Pour chocolaté mixture over cookie crumbs.

5. Mix strawberry puree with the rest of the cream cheese mixture.

6. Pour strawberry mixture over chocolate layer.

7. Insert ice cream sticks and freeze.

8. Remove from pan and cut into squares
