Harissa roasted cauliflower and Happy thanksgiving !

This year the approach of Thanksgiving brought a sense of relief as opposed to the usual ‘stress’ of planning. Why? Because this year we are going away on vacation with friends instead of being home.  It is going to be a reunion vacation with 7 of our friends and their families and we have been planning this for way too long! Can’t believe that it is finally happening!

Anyways before leaving I had to make at least a couple Thanksgiving dishes – decided to keep it simple considering we were going to be at an ‘all inclusive’ resort for the next few days! 🙂 I also wanted to clean up the fridge and had this huge cauliflower sitting in it waiting patiently for its turn to come.  Amidst the packing and the last minute chaos I wanted to keep it really simple. So I decided to just do a roasted cauliflower. Wanted to add a bit of spice (yes the Indian in me!) so I decided to add harissa blend (which is my latest favorite of spice blends!) and a dash of turmeric. Also added some crushed garlic as an afterthought and after tasting the cauliflower when done – added a dash of lime juice and felt it tasted even better with that!

Harissa roasted cauliflower

  • Servings: Makes about 3-4 servings as a side
  • Time: About 30 minutes
  • Difficulty: Easy

Ingredients:

  • 2 cups cauliflower florets
  • 1 medium red potato, cubed (optional)
  • 2 tsp harissa powder
  • 1/4 tsp turmeric powder
  • 2 garlic cloves crushed
  • 1/4 tsp salt
  • 1 tbsp olive oil
  • some freshly squeezed lime juice (optional)

Method:

Take a medium size glass or any other ovenproof roasting pan and place the cauliflower and potato pieces in it.  In a small bowl add all the other ingredients and mix using a fork or a whisk and pour the oil and the spices over the cauliflower and the potatoes.

Bake uncovered at 450 deg F (230 deg C) for about 25-30 minutes. (After 15 minutes get the tray out and just stir everything slightly to prevent sticking to the bottom of the tray)

Take out of oven and cover with foil until serving.
