Chocolate Nutella Butterscotch Cake

IMG_1594You are thinking  ….what in the world is that, right? 🙂  OK so my princess (of course you can no longer say that to her!) turned 8 and I wanted to bake a special cake.  Of course it had to be chocolate but then I thought what could I do to make it ‘extra special’ for her? What is that one thing in the world that she would do anything for? Candies!  Of course!  My older one did not like candies until he was about 8 or so.  But this one..hmm totally different story! She and candies – inseparables! Once when she was two, I couldn’t find her anywhere in the house and then finally I found her inside the pantry perched on the top shelf trying to get to the halloween stash that I had hidden from her.!  You could use the ‘candy bait’ to make her ‘finish her dinner’ especially when it included ‘healthy,yucky’ stuff…’to finish her chores’…’to stop annoying her brother’ …’to wake up early’ …and so and so forth..the list is endless!.  Yes, you are right – we have been bribing her with candies ..we are the ones to be blamed for totally spoiling her! Yes I raise my hands – I am partially, if not totally, responsible for this kid turning out this ‘candy crazy’!

OK so why not spoil her a litttle more I thought by adding some of her favorite candy flavors into the cake! Hence the Chocolate Nutella butterscotch came to life.  So I decided to add ‘nutella’, which she totally adores (and could probably eat the whole jar in one sitting!) and also loves ‘ferrero rocher’ chocolate, ‘butterscotch, another of her favorite flavors (used the chips which are meant for baking as opposed to the hard candy)  into the cake batter to elevate the simple chocolate cake and give it a ‘candy’ makeover.  I also added the same butterscotch flavor to the icing and ended up decorating the cake with M&Ms, an eternal favorite of hers!.  Oh almost forgot for the ‘8’, I decided to save some of the cake batter and poured it into a couple mini donut moulds!

DSC_0742Flour, Cocoa powder,eggs and butter – $4 … Nutella and Butterscotch and M&M candies – $2…..The look of pure delight and ecstasy ….PRICELESS! 🙂  BTW, have to admit this cake indeed turned out be quite delicious – the hazelnut and butterscotch flavor combination with chocolate made it really a ‘finger licking’ decadent cake!

Chocolate Nutella Butterscotch Cake

  • Time: About 1 hour 30 minutes, including baking time
  • Difficulty: Easy

 This recipe makes a 9 inch round cake

 Ingredients:

  • All purpose flour 2  cups
  • Unsweetened dark cocoa powder  1/4 cup
  • Baking powder 2  1/2 tsp
  • salt – 1/3 tsp
  • 6 eggs
  • Unsalted butter 1 1/4 cup (or 2 and a half sticks) or 250 gs, softened at room temperature
  • sugar (granulated or powdered) 2  cups
  • sour cream (or thickened plain yoghurt) 2 tbsp
  • vanilla extract 2 tsp
  • Milk  1/3 cup
  • 2 tbsp Nutella
  • 1/2 cup butterscotch chips

For the butterscotch icing:

1 cup heavy whipping cream

1/2 cup confectioner’s sugar (icing sugar)

2 tbsp melted butterscotch chips (melt by heating in microwave for about 10-20 seconds)

Method: 

  • Preheat oven to 350 deg F (or 180 deg C) and grease and lightly flour a round 9 inch baking pan.
  • Take a large plate or a tray and add the flour, cocoa, the baking powder and the salt. Sieve these dry ingredients so that they are mixed well. (Alternatively, you can mix them using a knife by geometric mixing).
  • Take a large mixing bowl and add the softened butter into it.  Next add the sugar too and mix using a hand mixer (or a stand mixer). When the sugar and the butter are mixed well, then add the eggs two at a time and keep mixing till you get smooth and creamy texture.
  • Now add the flour mixture to the butter and sugar mixture in the mixing bowl slowly 1/2 a cup at a time also adding the sour cream with the flour.  Also add the vanilla extract and again mix well.
  • Now take the milk in a small microwave safe bowl and add the nutella and the butterscotch chips. Microwave this for about 30 seconds. Take out and stir well with a spoon to get a creamy mixture. Pour this mixture too to the above batter and mix again for another 1-2 minutes until well incorporated.
  • Pour the batter into the greased baking pan and bake in the oven at 350 deg F for about 20-30 minutes, checking every two minutes after 20 minutes to check if its done. (Insert a knife in the center of the cake and if it comes out clean, then the cake is cooked)
  • Remove cake from oven and let cool for about an hour before decorating with the icing (see below) and M&Ms!.

To make Butterscotch icing:

Take a medium size bowl and whip the heavy cream on medium for about 3-4 minutes until you see it turn fluffy and then into soft peaks.  Add the icing sugar and melted butterscotch chips and whip for about 30 more seconds.
